Easy Dinner Recipes for the Busy Mom

When I was a mama of one, cooking dinner was sometimes tricky, but most nights I had a decent meal on the table for all to enjoy. Now that I have two sweet kiddos (and, recently, all of the planning for Happy Mom Conference!) cooking dinner can sometimes be a celebratory accomplishment!

(No shame, mamas, we have PB&J for dinner on those days that were just too trying... mama needs an EASY meal, and I know you feel me!)

While it is so easy to order take-out, let’s be honest, no one feels great after eating out a few nights in a row.

Finding meals that are good for you, easy and quick to make, AND meals that your kiddos love is a true miracle!

Baked Salmon with Rice & Avocado

One of our go-to weekly meals is baked wild Salmon, with a side of rice and avocado. Although lately Ryan, who's always loved avocado wants nothing to do with them, so we've replaced it with steamed broccoli (which he surprisingly has also always loved!) or cucumbers.

Prepping the fish takes two minutes tops... and then it's off to the oven for 15 minutes. Trader Joe's has a great organic brown rice in the frozen section that you can warm up on the stove in less than 5 minutes. Talk about a quick meal that is also good for you!

Lentil Soup

This is another one of our go-to easy dinners and both boys love it. Seriously, it's one of the fastest meals we make! You boil lentils, add a pinch of salt, chopped onion, chopped cilantro, and a secret weapon at the end, a sliver of butter! We even blend it in the food processor so Leo can easily eat it. 

Charcuterie Board

Snack boards are a must for mamas! Think charcuterie board for toddlers! These snack boards have become my go to and were inspired by @weelicous.  When I just don't have time to prepare a hot meal I cut up all kinds of colorful fruits and veggies, organic deli turkey breast slices, whole grain crackers, cheese, and serve it on a board on Ryan's table. He can enjoy a fun and healthy lunch while playing, all while mama's busy with baby brother, housework, or work!

Marinated Filet Beef with Rice

Another super easy go-to meal in our house is to buy marinated filet beef already cut into squares and cook it for 10 min in our Lodge (brand of pan) cast iron skillet. I serve with brown or white rice and a basil/mint mixture.  You can also make wraps or serve with quinoa. We cut the meat into smaller pieces for Ryan but as long as it's a tender meat he can easily chew it and he absolutely loves it!

One-sheet Chicken Dishes

One sheet pans are always easy and clean up is a breeze! Chop up whatever veggies you have, add chicken breast or thighs, add olive oil and your favorite seasoning, pop in the oven and 30-40 minutes later dinner is ready!

Breakfast for Dinner

Don’t forget breakfast for dinner is always fun for kids! Eggs, pancakes, fruit, and bacon, quick and easy! Sometimes the super simple meals are what the kiddos love best. Mamas, don’t feel like you have to make a gourmet {or instagram photo worthy} dinner every night.
